Austin, Year 4, Day 62: Caramel Apple Cupcakes

My friend Melissa sent these cupcakes our way via The Frugal Girls.  They took me forever to make because I decided to start in the evening and of course, I needed more apples than the recipe called for, so I spent over two hours on making the “apple mush.”  And then I had forgotten to put nut topping on the list, so I didn’t want to do the caramel part until after Jose went to the store.  Two days later, though, we have these yummy cupcakes.  They taste more like muffins, in my opinion, but still yum.  The recipe that follows belongs to the folks over at the Frugal Girls.  I’ve made just a few changes based on my experience.

Austin, Year 4, Day 42: Caramel Apple Sundaes

Have you ever seen a picture of something yummy only to find out it’s not exactly what you thought?  That’s what happened with today’s project.  I saw a picture on Pinterest that I thought was what I wanted, but when I followed the link, it was not exactly what I was looking for.  So, I decided to just go with what I thought it was going to be and it turned out okay.

Austin, Year 4, Day 33: Pumpkin Spice Fudge

Today, we are celebrating the first day in a loooong time that it has not hit the upper 90s (or higher).  Right now, it is 82 degrees in the Austin area and I couldn’t be more thrilled.  I know low 80s isn’t exactly fall, but I’m just appreciating what I have!

So, to celebrate, we decided to make Pumpkin Spice Fudge.

We got the recipe from Aunt Peg’s Recipe Box.  Since it was soooo good, we didn’t have to make any changes to it, so what follows is her recipe.
